Pork and Broccoli Casserole – Keto-Friendly

This Pork and Broccoli Casserole will fool you. Mayonnaise and sour cream elevate this dish from being just another casserole. The tangy flavor of the sauce combined with the smokey pork makes you crave more—an entree and side dish all in one pan.

You can find several pork chop versions of this recipe on the internet, but they can’t compete with the smokey shredded pork.

Notice that this recipe uses a lot of Schwan’s products. With the lockdown, I have been using a lot of Schwan’s products. If you don’t have access to Schwan’s, you can substitute similar products. Except as a customer, I don’t have any relationship with Schwan’s.

What Seasonings are in the Casserole

  • 1 tbsp Italian Seasonings
  • 1/4 tsp Himalayan Salt
  • 1 tsp Garlic Powder
  • 1/8 tsp Black pepper
  • 1 tbsp Fresh Parsley

How Do You Make the Pork and Broccoli Casserole

First, I thaw out the pork in the microwave on the defrost setting. Then, I thaw out the broccoli in the microwave.

I mix all of the seasoning, the shredded Parmesan cheese, and the mayonnaise and sour cream together in a mixing bowl.

Then, I spray the baking dish lightly with olive oil. Add the thawed pork and the broccoli.

Next, I spread the cheese/herb/sauce mixture on top of the pork and broccoli.

I sprinkle the cheddar cheese on top and add the crumbled bacon (you might need to microwave the bacon for 20 seconds.)

Bake at 400 degrees following the recipe below.

Ingredients
  

  • 10 oz *Schwan's Fully Cooked Pulled Pork 1 pack thawed)
  • 12 oz Schwan's MicroSteam Baby Broccoli Florets (1 pack)
  • 2 strips Schwan's Fully Cooked Bacon, crumbled
  • 3/4 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 3/4 cup Parmesan Cheese, shredded
  • 1 tbsp Italian Seasonings
  • 1 tsp Garlic Powder
  • 1 tbsp Fresh Parsley
  • 1/4 tsp himalayan Salt
  • 1/8 tsp Black pepper
  • 4 oz Cheddar Cheese, shredded
  • Olive Oil Spray

Instructions
 

  • Heat oven to 400 degrees.
  • In medium mixing bowl, combine the mayonnaise, sour cream, shredded parmesan, garlic powder, and salt.
  • Microwave the broccoli for 2 minutes or so to thaw it.
  • Lightly spray the baking dish with the olive oil.
  • Arrange the shredded pork and the broccoli in the baking dish.
  • Spread the cheese mixture onto the top of the pork and broccoli.
  • Sprinkle the shredded cheddar on top of the casserole.
  • Crumble the bacon on top of the casserole.
  • Cover the casserole with foil.
  • Bake for 15 minutes.
  • Uncover the dish and back another 15 minutes.

Notes

*Schwan’s no longer carries the 10-ounce package of shredded pork. In this recipe, you can use any non-BBQ shredded or pulled pork. I like the smoked pork. All major grocery stores (Kroger, Sam’s Club, Walmart, etc.) sell a variety of pulled/shredded pork.  There are many good recipes for slow cooking or baking pork for shredding.
