Traveling Cross Country

According to Olive and Pearl, the pattern is described as:

This slightly slouchy beanie/hat/toque came to fruition based upon a trip of traveling cross country to visit my sister. The staggered and stepped stitches remind me of the mountains as we drove through them and then gazed upon the peaks each day during our stay. The clean lines are like the plains we traveled across, not to mention the endless miles of highways. And then the squishy cable in the center is reminiscent of the crazy trip in general, the clouds floating over the mountaintops, but more of the hugs we shared once I saw my sister and her family after 1100+ days apart.

Traveling Cross Country can be worn with the design in the center or off to the side. Let it be the beginning of one of your adventures, making your own memories.

This week, I had another week of effortless dinners. My left arm is still wrapped in a bandage. With Mike’s assistance, we prepared Salisbury Steaks to celebrate Valentine’s Day. We also cooked a Slow Cooker Pot Roast and relished multiple tender roast beef and gravy servings. In addition, we savored Schwan’s Stuffed Chicken, Broccoli, and Cheese, and I personally prepared Chicken Carbonara. The recipes provided below have a nostalgic touch. Take a step back in time and savor these delightful dishes.

Salisbury Steak

I made the following adjustments to the recipe:

  • I only used one packet of the onion soup
  • Mike formed 6 oval patties
  • I used a jar of Heinz Mushroom and a jar of Heinz Brown with Onions gravy.
  • Substituted panko crumbs (added a little more than 1/2 cup)
  • Because I didn’t use the Italian Bread Crumbs, I added a tablespoon of Italian Seasoning.

We enjoyed this meal. It makes enough for leftovers and some for the freezer.
