This slightly slouchy beanie/hat/toque came to fruition based upon a trip of traveling cross country to visit my sister. The staggered and stepped stitches remind me of the mountains as we drove through them and then gazed upon the peaks each day during our stay. The clean lines are like the plains we traveled across, not to mention the endless miles of highways. And then the squishy cable in the center is reminiscent of the crazy trip in general, the clouds floating over the mountaintops, but more of the hugs we shared once I saw my sister and her family after 1100+ days apart.

FOOD/RECIPES
This week was another easy-to-fix supper week. My left arm is still bandaged. Mike helped me mix up Salisbury Steaks for Valentine’s Day. We did fix the Slow Cooker Pot Roast and enjoyed several meals of roast beef and gravy. We also had Schwan’s Stuffed Chicken, Broccoli, and Cheese, and I fixed Chicken Carbonara. The recipes below are kind of nostalgic. Step back into the past and enjoy these recipes.
Salisbury Steak

I made the following adjustments to the recipe:
- I only used one packet of the onion soup
- Mike formed 6 oval patties
- I used a jar each of Heinz Mushroom and Heinz Brown with Onions gravy.
- Substituted panko crumbs (added a little more than 1/2 cup)
- Because I didn’t use the Italian Bread Crumbs, I added a tablespoon of Italian Seasoning.
Chicken Carbonara

We enjoyed this meal. It makes enough for leftovers and some for the freezer.
