Pork and Broccoli Casserole - Keto-Friendly

  • 10 oz *Schwan's Fully Cooked Pulled Pork 1 pack thawed)
  • 12 oz Schwan's MicroSteam Baby Broccoli Florets (1 pack)
  • 2 strips Schwan's Fully Cooked Bacon, crumbled
  • 3/4 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 3/4 cup Parmesan Cheese, shredded
  • 1 tbsp Italian Seasonings
  • 1 tsp Garlic Powder
  • 1 tbsp Fresh Parsley
  • 1/4 tsp himalayan Salt
  • 1/8 tsp Black pepper
  • 4 oz Cheddar Cheese, shredded
  • Olive Oil Spray


  • Heat oven to 400 degrees.
  • In medium mixing bowl, combine the mayonnaise, sour cream, shredded parmesan, garlic powder, and salt.
  • Microwave the broccoli for 2 minutes or so to thaw it.
  • Lightly spray the baking dish with the olive oil.
  • Arrange the shredded pork and the broccoli in the baking dish.
  • Spread the cheese mixture onto the top of the pork and broccoli.
  • Sprinkle the shredded cheddar on top of the casserole.
  • Crumble the bacon on top of the casserole.
  • Cover the casserole with foil.
  • Bake for 15 minutes.
  • Uncover the dish and back another 15 minutes.


*Schwan's no longer carries the 10-ounce package of shredded pork. In this recipe, you can use any non-BBQ shredded or pulled pork. I like the smoked pork. All major grocery stores (Kroger, Sam's Club, Walmart, etc.) sell a variety of pulled/shredded pork.  There are many good recipes for slow cooking or baking pork for shredding.
